No fun headlines today…I may restrict that to once every couple of days…linking is hard work.
Now as promised, Josh’s Recipe Corner!
Chicken With Mushrooms and Peas
3-4 Chicken Breasts 1 pkg frozen peas
5-6 dried shiitake mushrooms, or 1 can sliced regular (i.e. button) mushrooms
2 Tbsp Soy Sauce 2 C. water
3 Tbsp Oyster Sauce (optional) 2 Tbsp cornstarch
2 Tbsp Water
Marinate Chicken in Soy sauce and Oyster sauce for about 30 min-1 hour. Best way to do this is to place chicken and marinade in ziploc bag, seal, shake, and place in fridge.
20 min before you start cooking chicken, place shiitake mushrooms in 2 cups water and let sit for 10 min, then bring to a boil. (can increase flavor by soaking mushrooms in chicken broth) Cover and set aside
Spray skillet with PAM, or add 1.5 Tbsp of oil to skillet, then fry chicken on medium to high heat, about 5 min on each side. Check to see if chicken by making small incision and seeing if it is white all the way through…if you see any pink, keep cooking on each side another 2-3 minutes. Once chicken cooked, add frozen peas and mushroom broth, simmer on medium to low heat for 5-10 minutes. Add cornstarch mixed with 2 Tbsp water and cook until thickened. Serve over hot rice
*Note-if you opt not to use the cornstarch, you can save the mushroom broth after removing the chicken from it, and use it as a soup stock for a variety of other dishes

i liked the super walmarts in FL. The walmarts here in TX aren’t so good. I think the “supermarket” here is the H.E.B. I wonder what that stands for

There’s a huge supermarket chain in Florida called “Publix,” but we like to fondly refer to it as “Pubix.”
Are supermarkets just a S CA thing? Cuz I haven’t seen a Ralph’s, Albertsons, Vons or Sav Ons since I left.
